Green Grillin’: Grilled Avocados Stuffed with Quinoa

A quick and easy ‘green’ recipe for avocado lovers! You’ll be amazed at how delicious these stuffed avocados taste!


For the Vegetable Quinoa:

• 1 cup cooked quinoa

• 4 green onions, sliced

• Half of a cucumber, chopped

• 4 tomatoes, chopped

• 1/2 cup corn

• Chopped parsley

• Chopped cilantro

• Juice of a lemon

• 1 tbsp olive oil

For the Grilled Avocados:

• 12 large avocados

• 1 lime, juiced

• 1 tbsp olive oil


Vegetable Quinoa:

1. Cook quinoa according to instructions, let cool and transfer to a bowl.

2. Add all the other ingredients, including lemon juice and olive oil to the quinoa, mix and set aside.

Grill the avocados:

1. Heat the grill to medium hot.

2. Halve the avocados and remove the seed, but leave the skin on.

3. Brush the avocado halves with lime juice and olive oil.

4. Lightly brush the grill with oil and grill the avocados flesh side down for about 3 minutes then remove from the heat.

5. Stuff the avocadoes with vegetable quinoa and serve with extra lime slices.
